About / 30% bleed off of juice to aid in concentration. Daily pumpovers while cold soaking, followed by inoculation with premium Bordeaux yeast. The wine aged on its lees under French oak influence for 18 months, and with an additional 7 months of aging in a neutral container before it was bottled on February 1, 2018. Each bottle has been hand signed and numbered by Mila Sketch, and hand wax dipped.
